Chick Pea Casserole


Shopping List:
1 SORSO Original Flavour or Smoked Garlic
1 Onion, finely chopped
3 Garlic cloves, sliced(Not required if using Smoked Garlic Flavour)
Tin of Chick Peas
2 Sprigs fresh thyme
3 Medium Carrots, sliced
1 Red Pepper, chopped
1 Yellow Pepper, chopped
1 Tbsp Olive Oil
250ml Vegetable Stock cube
2 Courgettes, sliced thickly
250g cooked grain of your choice (we used Quinoa)


Quick and Simple Method

1, Heat olive oil in a large, heavy-based pan. Add onions and cook gently for 5 – 10 mins or until softened.

2. Add garlic cloves, carrots, red pepper and yellow pepper and cook for 5 minutes.

3. Add SORSO, vegetable stock, courgettes and the fresh thyme. Cook for a further 15 – 20 minutes or until thickened Take out the thyme

4. Serve with wild and white basmati rice, mash or quinoa
