Mushroom Burger

Shopping List:
Mushroom Burger:
4 Large Flat Mushrooms
1 tbsp Olive Oil
1 Ball Mozzarella
4 Burger Buns, sliced in half
Filling:
SORSO Relish:
1 x 300g SORSO Original
1 tbsp Olive Oil
1 Garlic Clove, crushed
1 Onion, finely diced
Buttered Onions (Optional):
25g Butter
2 Onions, finely sliced

Quick and Simple Method

SORSO Relish

Heat the Olive Oil in a frying pan over a medium heat, add the diced onions , garlic and a pinch of salt. Fry for 4-5 minutes, or until the onion is soft.

Stir in SORSO to the mixture and gently simmer until the mixture is a relish consistency. Taste and adjust the seasoning as necessary. Leave to cool.

Buttered Onions

Melt butter in a frying pan over a medium heat. Add diced onions. Turn down the heat and keep stirring now and again, cook for a further 25-30 minutes, or until dark golden in colour.

Mushrooms

Preheat the oven to 180C/160C Fan/Gas 4. Carefully trim the stalk off the mushroom and place stalk side facing upwards onto the oven tray, drizzle with Olive Oil and season. Bake in the oven for 10 minutes, or until beginning to soften.

Mushroom Burger Assemble

Lightly toast the cut side of the burger buns. Spread with a little SORSO relish, next place the buttered onion, mushroom and mozzarella and top with other halve.
