- Cook the cauliflower in boiling water for 3-4 minutes, or until just tender and then drain, keeping about 100ml of the cooking liquid. Set Aside.
- Heat oil in a large pan and fry some garlic and aubergine for about 4 minutes.
- Add almonds, SORSO and cauliflower with the reserved cooking liquid and stir-fry for 3 – 4 minutes.
- Cook some Grain according to instructions. (Grain: Quinoa, Bulgar Wheat, Wild Rice)
- Stir grains into the cauliflower mixture and season to taste. Sprinkle with chopped parsley.
- Serve and Enjoy
